Yields 10 servings
For the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
To make the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Combine every components in a pot, bring to a simmer, agitating until the sugar dissolves. After that, remove from the stove and leave to cool down entirely. Transfer into a sealable bottle, seal keeping it in the fridge, where it will keep for about four weeks.
For the Premix: Pour every spirits and syrup into a large bottle, leave to sit for one hour, then filter it best through a fine cloth, so it's fully clarified.
To serve: Measure 85ml of the cocktail base to a stirring glass containing ice, gently stirring lightly for about 60 seconds until cold. Pour to a cold coupe glass or similar, garnish with the cranberries adding the final touch with a quick spritz of the essential oil above the glass.
